Paleo Taco Salad with Cauliflower Rice

I've been battling with this thought for a little while now, and maybe you can relate. Eating well is complicated. It's complicated for a variety of reasons, from ingredient availability and expense, to picking apart a traditional dish that may be culturally significant but also not the most nutritionally sound. It's hard to navigate these waters, you guys. I get it. But I also get wanting to eat dishes that taste amazing. I get mixing new and old customs and new and old flavors. I get being inspired by the past and bringing it to the present. I get finding the creativity in food and feeling accomplished in the final product. I get bringing people together around a table and serving nourishing and delicious dishes with love. So bust out this taco salad next time you're feeling like you just need a great tasting, not very complicated meal. Invite your friends. Make some memories.

Ingredients:

  • Cauliflower rice
  • 1 diced green pepper
  • 1 diced red pepper
  • Beef and onions
  • 1/4 avocado (optional)

Steps:

  1. Cook your cauliflower "rice" using my delish lime and cilantro rice recipe.
  2. Add layer of "rice" into bowl.
  3. Layer diced red and green peppers on top of "rice".
  4. Layer beef and onion on top. Use this recipe for a delish beef and onion recipe.
  5. Add sliced avocado (optional).
  6. Eat and enjoy!

The best part about this dish is that you can really make it your own. Add whatever veggie toppings you enjoy. Sub beef for chicken. Be creative! Make this yours.
