Prosciutto Wrapped Asparagus

It's BBQ season, -ishes! I've been waiting for summer since that January snow storm that gave us east coasters all sorts of cabin fever. I'm pretty sure this is going to be one of the best summers yet, because we all need this to be the best summer yet. Because this has been a tough year so far. Because the pain and struggle can't and shouldn't last forever. Because this is the year of the good summer! And why shouldn't we hope for that? Let's kick off the best summer yet with some of the best grilled veggies. Inspired by good friend and fellow crossfitter, Sammy, I was excited to get these tasty beauties on the grill! Oh baby.

Ingredients:

  • 18 asparagus spears
  • 9 strips of prosciutto
  • avocado or coconut oil

Steps:

  1. Pre-heat grill to about 350 degrees.
  2. Cut the bottoms of the asparagus spears.
  3. Wrap 2 asparagus spears per one prosciutto strip.
  4. Drizzle with avocado or coconut oil.
  5. Placed prepared asparagus on tinfoil.
  6. Cook for about 15 minutes, or until asparagus is tender.
  7. Eat and enjoy!

This is the easiest side dish to make for any BBQ! Go outside, enjoy the company of friends, and make some delish memories.
